Lasagna, So Delicious

Ingredients:                                                          
1 medium onion                                                    
1 garlic clove                                                     
2 Tbsp olive oil                                                     
1 lb ground beef                                                   
1 can (7 1/2 oz) tomato sauce                              
1 can (5 1/2 oz) tomato paste                            
Salt                                                                     
1tsp oregano  
1tsp basil     
1/2 tsp paprika                                                      
3/4 cup water                                                        
1 egg                                                                   
1 pkg frozen chopped spinach (thawed)               
1 cup creamed cottage cheese                               
1/3 cup parmesan cheese                                    
1 lb lasagne noodles (pre-cooked)                      
1 pkg (12 oz) mozzarella cheese

Directions: 
Saute onion, garlic and 1 tbsp olive oil until tender. Add beef until brown. Add in tomato sauce and paste. Add oregano, basil and paprika and water. Simmer for 15 minutes. While that is simmering, mix together spinach, cottage cheese, parmesan cheese, one of the eggs and the remaining olive oil. Set aside. Spread half the meat sauce into 9x13" pan and cover with a layer of noodles. Then spread all the spinach mixture over the noodles. Then cover with another layer of noodles. Then cover with the remaining meat sauce. Bake in 350 degree oven for 45 minutes. Top with mozzarella cheese and bake 15 minutes longer.

Chocolate Chip Cookies

Ingredients:
2 1/4 cups Gluten-Free Flour (pre mixed flour has Xanthan gum in it already; if not add 1/4 teaspoon of Xanthan gum)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter softened
3/4 cup firmly packed brown sugar
1/2 cup sugar
2 Eggs
2 teaspoons vanilla
2 cups semi-sweet chocolate chunks or chips






Directions:
Heat oven to 375°F. Combine flour blend, baking powder, baking soda, salt and (xanthan gum, if not in pre-mixed flour) in medium bowl. Set aside.

Combine butter, brown sugar and sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla. Continue beating, scraping bowl often, until well mixed.

Reduce speed to low. Beat, gradually adding flour mixture, until well mixed. Stir in chocolate chips.

Drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake for 9 to 12 minutes or until light golden brown. (DO NOT OVERBAKE.) Let stand 1 to 2 minutes. Remove from cookie sheets.



 

Beef Stewy Rice

Ingredients:
1Kg stewing beef
2 carrots diced
1/2 onion diced
1 cup beef broth (I used Watkins beef soup and gravy base to make the broth)
Spices: nutmeg, salt, pepper, paprika, garlic powder (however much you like)
2 cups rice to 4 cups water.

Directions:
Place all ingredients in the crockpot except for rice and water
On high for 4 hours
Remove the meat and cut up into smaller pieces
Spoon out half a cup of broth from crockpot put it into a cup and add 1 1/2 Tbsp cornstarch, mix until smooth and then put back into crockpot, then add the meat.
Cook rice while stew is thickening.
When rice is finished place it in a 9x13 oven dish.
When stew is thick, poor over the rice.
Add grated cheese on top
Bake in oven at 350F for 30minutes.

Gluten Free Rice Krispies

Ingredients:
3 Tbsp margarine or butter
5 cups miniature marshmallows
6 cups Kelloggs Rice Krispies Gluten Free Cereal
(they only sell them in the states at Fred Meyers)

Directions:
1.Melt margarine or butter in a large bowl that fits in the microwave
Add marshmallows. Put in microwave for 2 1/2 minutes.
2. Add Rice Krispies. Stir until well coated.
3. Put mix in a 9x13 glass pan, spread out until even throughout pan.

Roasted Potatoes and Chicken

Tonight my mom made dinner and she made delicious roasted potatoes with chicken thighs and green beans.  It tasted really good. 

This is how she made the roasted potatoes:
1.peel and dice up russett potatoes
2. put them in a big bowl and poor extra virgin olive oil over the potatoes
3.sprinkle garlic powder, pepper, salt
4. toss it all together and put it in a 9x13 oven dish and grease pan before putting potatoes in. 
5.In the oven at 350F for 45min-1hour.

Chicken thighs:
1.Put chicken in 9x13 and grease pan before putting chicken in
2.sprinkle salt, pepper, poultry seasoning.
3.In the oven at 350F for 30-45min.
Green beans:
1.boiled frozen beans in water, cook according to package.
2.butter over the beans

Pizza

For supper I made Pizza.  I bought the pizza dough pre made.  All I did was add a can of Heinz Original Tomato Paste and added Basil, Oregano, garlic powder, salt and pepper for the sauce.  I put 1 can of flaked ham and then I grated chedder cheese on top. Baked in the oven at 450 F for 8 minutes.  Tasted really good.

New food lifestyle

I changed my blog because I never really knew what to write about and so now I won't really be writing much but more like giving amazing recipes along with pictures of the food :)  I was just diagnosed recently with Celiac disease and now my eating lifestyle has changed. So I thought it would be a great idea to post the food I make which will be gluten free for others who also can't eat gluten :)
