Cream of Chicken Soup

Ingredients:6 cups of Chicken broth
6 chicken drumsticks (this was used for making the chicken broth)
3 cups of milk
6 Tbsp of cornstarch
1/4 of a medium onions (diced)
Salt
Pepper
Cayenne pepper

Directions:
Make your own chicken broth however you like it.
In pan pour 6 cups of chicken broth, diced onions, chopped up chicken from chicken broth. Let it come to a boil and cook until onions are soft. Then add 2 of the cups of milk to the pan. Mix the cornstarch with the remaining milk in a separate bowl, then add it to the pan. Stir constantly on medium heat. Then add all the spices. And continue to stir until it is boiled and thickened. (It tastes better the next day and it is a bit thicker as well.)

I don't have any pictures of the soup because when I ate it I completely forgot to take pics and then the next day my camera was dead so whenever I make it again I will definetly post some pics!


Okay so a month later I finally have a pic of the soup! Its super good. :D

Gluten Free White Bread

Okay so I was so excited when I heard that you can buy a bread machine that has a Gluten Free cycle on it, and well I just had to have it! So i bought a Black&Decker Bread Machine. I'm really excited about how my very first loaf of bread turned out and how it tasted! Delicious! :) (By the way I got this recipe right out of the book that the bread machine came with.)

Gluten Free Bread, 3-lb. loaf.
2 1/4 cups water (80-90 degrees F)
4 large eggs, at room temperature
1/3 cup canola oil
1 1/2 tsp vinegar or cider vinegar
3 cups white rice flour
1 cup dry skim milk powder
2 tsp. salt
3/4 cup potato starch
3/4 cup tapioca flour
1/2 cup cornstarch
4 1/2 tbsp. sugar
1 1/2 tbsp. xanthan gum
3 1/4 tsp. bread machine yeast

1. Measure ingredients into baking pan in the order listed, making sure yeast does not touch the liquid.
2. Insert bread pan securely into unit; close lid. Plug into electrical outlet.
3. Select Gluten Free setting (#6 on the Black&Decker), appropriate loaf size (3-lb.) and desired crust color (I did medium)
4. Push Start/Stop (1/0) button.
5. The complete signal will sound when bread is done.
6. Using pot holders, remove bread pan from the unit and carefully remove bread from pan. (Kneading paddles may remain in bread. Remove paddles when bread has cooled.)
7. Allow bread to cool on wire rack until ready to serve (at least 20 minutes).

This bread actually tastes like real bread! It's been a while since I have had bread with wheat in it but I can tell you that it does because my mom says so haha:) Anyways I want to show you a comparison as to what I used to eat, it's quite hilarious!
This is just the package just wait till you see the bread size in comparison to the bread that I made!
So obviously the one in the middle is the bread from the store. I'm not gonna lie it does taste really good. But it only tastes good toasted and with nutella on it because it is a sweet bread. So I am excited to eat my home made bread with ham and cheese! I haven't had a ham and cheese sandwich for a very long time and I can't wait! :) I hope you have fun making it and eating it as much as I did and will!! :)

Ham Fried Rice

Ingredients:
3 Tbsp. oil
3 eggs, beaten
1/2 cup green onions
1/2 cup frozen peas, thawed
3/4 cup chopped cooked gluten free black forest ham (Grimms, all Grimms is gluten free according to Hofstedes.)
3 cups cooked rice
soysauce (China Lily) add to your liking
1/4 tsp. garlic powder
1/8 tsp. pepper
Directions:
In large skillet or wok, heat 2 Tbsp. oil. Add eggs and stir fry until set. Remove and set aside.
Add remaining oil to skillet and add onions, peas and ham. Stir fry 2 min. or until heated well.
Stir in egg and the rest of the ingredients. Heat through.
I added Soysauce right before I ate it. :)

Ham and Cheese Pizza

Ingredients:
Udi's pizza crust. (You can buy this in the gluten free freezer section at Pricesmart. Possibly Superstore but I believe it's cheaper at Pricesmart.)
1 little can of tomato paste (Hunts)
1 little can of tomato sauce (Hunts)
Basil
Oregano
1 or 2 Garlic cloves (depends on how garlicie you like it)
Onion Powder
Pepper
Chopped Black Forest Ham
A little bit of a shredded mix (Monteray Jack chedder cheese)
Mozzarella cheese

Directions:
Mix Tomato paste and sauce in a bowl. Add the spices and mix well.
Spread pizza sauce onto the Udi's pizza crust.
Sprinkle a little bit of the shredded mix.
Add chopped Ham (or whatever toppings you like)
And top with Mozzarella cheese.
Put parchement paper on baking sheet and put the pizza on top.
Put it in the oven at 425 degrees F.
And cook for 8 minutes.

Karina's Chocolate Truffle Cake

Okay so I will admit that I got this recipe from someones blog and I thought I would try it out! A friend, Greta sent me the link to her blog and I saw the cake on it and I just new I had to try it. So I did. :) It's flourless but oh so delicious! Its pretty easy to make. So all I will do is give you the link where I found this recipe and you can get it too! Just click here. I thought I would share some of the pics I took during the process of making the cake batter!
This is the Chocolate sauce that I melted on the stove. So velvety and rich and creamy!!
And this is what happens when you leave the whisk in the pan and it comes flying out onto the ground...Chocolate art!!!
This is the 7 eggs, brown sugar and salt mix before I added the chocolate sauce.
And this is what the cake looked like when it just came out of the oven. Yummy!!!
 And this is what it looked like the next day with a dusting of Cocoa powder.
A little side note to the cocoa powder I used: I used Fry`s Cocoa and they have 3 places where they make it. One can has a list of Allergens such as wheat, soy, milk etc. Another can has just May contain milk. and another can has no list of Allergens to be aware of. So three cans, three manufactorers, 2 of the cans are Gluten Free! Always look at the ingredients before buying!
And this is how I ate it!!! Yummy!!!

Chicken Enchiladas


Ingredients:
2 Tbsp Margarine
2 Tbsp Bobs Red Mill All Purpose Flour
1 cup milk
1 1/2 cup grated old chedder cheese
1 1/2 cups Old el paso Taco Sauce
1 tsp cumin
pepper
salt
2 cups cooked diced chicken
Western family gluten free tortillas (about 8" tortilla)
1/2 cup sour cream

Directions:
In saucepan, melt butter. Whisk in flour; cook for 2 minutes. Whisk in milk; boil till thick. Remove from heat; stir in 1/2 cup cheese, 1/2 cup taco sauce, cumin, salt and pepper. Stir in chicken.
First spread a bit of sour cream on the tortilla. Using small amounts, fill tortillas. Roll up tightly, tucking in edges. Place tortillas in a greased 9 by 13 dish. Spoon remaining taco sauce over tortillas. Sprinkle with remaining cheese. Bake at 350F for about 30 minutes.

It may not look appetizing when it is cut open but it sure tasted amazing!!

Salmon with Roasted Potatoes


Okay so I gave you a version of the roasted potatoes with chicken but this time it is with Salmon and I put different spices on the potatoes.

The spices I put on the potatoes are:
Pepper
Garlic powder
Onion powder
A little bit of Rosemary
Paprika

Toss the potatoes with the Extra Virgin Olive Oil and all of the spices. Then grease the 9x13 baking pan with olive oil and throw in the Potatoes. (Do not cover potatoes)
Preheat oven for 400F.
Put the potatoes in the oven and cook for 45minutes- 1 hour.

The spices I put on the Salmon are:
Sea Salt
Pepper
Grease the foil with Olive oil and put the salmon on top of the foil and wrap it tight and throw it in the oven for 20 minutes. (First 10 minutes to heat the foil and then 10 minutes for every inch of thickness.)
The Salmon should flake apart with a fork, if it does it is done.

This Salmon isn't like "oh you know it's okay." no it is "To Die for"!!! So good! :D
 You should really consider making this meal this week sometime. You will LOVE it!!

Rice Krispies

I know I posted a recipe for the rice krispies before but I made them again and I tweaked the recipe and now they taste even better than before!! I checked some of the stores again in Canada and Pricesmart and Superstore sell the boxes of cereal!!! Superstore is about $1 cheaper than Pricesmart. :)
Ingredients:
3 Tbsp margarine or butter
5 cups miniature marshmallows
4 1/2 - 5 cups Kelloggs Rice Krispies Gluten Free Cereal

Directions:
1.Melt margarine or butter in a large bowl that fits in the microwave
Add marshmallows. Put in microwave for 2 1/2 minutes.
2. Add Vanilla to the marshmallows.
3. Add Rice Krispies. Stir until well coated.
4. Put mix in a 9x13 glass pan, spread out until even throughout pan.

My Killer Mac 'n' Cheese

Ingredients:
4 cups of water
1 cup of Rice Pasta Elbows (Macaroni noodles)

Cheese sauce ingredients:
1 tbsp of butter
1 tbsp of Bob's Red Mill All Purpose Baking Flour
1/2 cup milk
nutmeg
salt
pepper
aged chedder

Directions:
Pour 4 cups of water in a pan and boil it.
While the water is boiling start making the cheese sauce.
Grate the cheese.
Put 1 tbsp of butter in a pan and let it melt on the stove on medium temperature.
when that is melted, add the flour into the butter and whisk it for 1 minute to make a rue.
Then add the milk.  Add spices to your liking, I add Nutmeg, pepper, salt. keep whisking so it doesn't burn.
Boil and let it thicken.
Then take it off the heat and add the cheese, stir in until melted.

When the water is boiling add the noodles. Cook until the noodles are ready to your liking. Drain the water and pour the noodles into the pan that has the cheese sauce. Mix and put it in a bowl. And then it is ready to eat!!!

The Most Amazing Chocolate Chip Cookies!!

So the recipe I am using is the same one that I have on here already but I tweaked it and it tastes a whole lot better. Its chewy and gooy and chocolaty! so delicious!
Ingredients:
So I used the flour mixture that I pre-made. (Just look for my post "Flour Mixture")
2 1/4 cups Gluten-Free Flour Blend
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, softened
3/4 cup firmly packed brown sugar
1/2 cup sugar
2 eggs
2 teaspoons Watkins vanilla
1 (12-ounce) package (1 1/2 cups) semi-sweet chocolate chips

Directions:
Heat oven to 350°F. Combine butter, brown sugar and sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla. Continue beating, scraping bowl often, until well mixed.

Add flour blend, baking powder, baking soda, salt.

Reduce speed to low Beat until well mixed. Stir in chocolate chips.

Drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake for 9 minutes or until light golden brown. (DO NOT OVERBAKE.) Let stand 1 to 2 minutes. Remove from cookie sheets.


Flour Mixture

This flour mixture is excellent for making cookies!!
1 1/2 cups sorghum flour
1 1/2 cups cornstarch
1 cup tapioca
2 tsp Xanthan Gum
(For the Xanthan Gum you put in 1/2 tsp to every cup.)
Shake really REALLY well!!! Maybe go outside while you shake it.
